Capellini's Italian restaurant is set to open in Loudoun, bringing a taste of old-school Italian cuisine to the Ashburn area. This new venture, led by Chef Mike Cordero, promises to be a smaller, more intimate version of his renowned Carbonara restaurant. With a focus on fresh pasta, classic Italian dishes, and a unique Parmesan wheel experience, Capellini's aims to delight food enthusiasts in Brambleton. The restaurant will occupy a 3,500 square foot space, previously home to Rebel Taco Cantina, and will offer seating for 75 guests indoors and 80 guests outdoors. Cordero's award-winning Chicken Parmigiana is expected to be a highlight on the menu, alongside the famous Parmesan wheel, where a 40-pound wheel of Parmesan is melted and swirled with pasta. The restaurant is set to open this fall, with construction expected to begin soon after the lease was signed earlier this week. This new addition to the Loudoun dining scene is sure to be a welcome addition for local foodies, offering a unique and intimate dining experience.
